100% grapes from Cashel vineyards off Lime Kiln Road in Nevada County. After gently being crashed/destemmed, the must was in contact with the skin for two hours only hence the pale pink color. Aromas of tropical fruit, mango, quince, star anis and herbs tend to fill the bouquet while the palate is long and very fruity. This is unique wine and very seductive, extremely limited amount. Only 4 cases available. Fermentation took place in a stainless-steel fermenter and no SO2 added at any point.
