50/50 Grenache Cinsault hand harvested and picked very early morning. the grapes come from Cashel vineyard off lime Kiln Road in Nevada county. the vineyards are delt with the utmost care and are kept in the most non-certified organic ways. The grapes are carefully picked and gently crushed/destemmed. Fermentation continues for 5 days and after, the must is transferred manually to a neutral French oak barrel where it rests until bottling totally undisturbed. no racking, filtering or fining takes place and zero SO2 added at any point. This, like the rest of our wines, is a low intervention wine with lots of fruit and delicious bouquet of spices and herbs as well as a very long finish.
